This recipe is a flavorful bruschetta made with wheat bread, cherry tomatoes, garlic, red onion, and olive oil, perfect for a quick and delicious appetizer or light meal.

Ingredients

  • 4 slices of wheat bread (baguette or Italian bread works well)

  • 1 cup cherry tomatoes, halved

  • 2 cloves of garlic, minced

  • 1/4 cup finely chopped red onion

  • 2 tablespoons extra-virgin olive oil

  • Salt and pepper to taste

Directions

  • Preheat your oven to 375℉ (190℃). Place the bread slices on a baking sheet and lightly brush each side with olive oil.
  • Toast the bread in the preheated oven for about 8-10 minutes, or until it becomes crispy and lightly golden. Keep an eye on it to prevent burning.
  • While the bread is toasting, prepare the cherry tomato topping. In a bowl, combine the halved cherry tomatoes, minced garlic, finely chopped red onion, and extra-virgin olive oil.
  • Season the tomato mixture with salt and pepper to taste. Mix well to ensure all the ingredients are evenly combined.
  • Once the bread slices are toasted, remove them from the oven and let them cool slightly.
  • Rub one side of each bread slice with a peeled garlic clove. This adds a subtle garlic flavor to the bruschetta.
  • Spoon the cherry tomato mixture onto the garlic-rubbed side of each bread slice, distributing it evenly.
  • Serve the bruschetta immediately while the bread is still slightly warm and crispy.

Enjoy the delightful combination of cherry tomatoes, garlic, red onion, and olive oil on the delicious wheat bread!
