This recipe creates adorable deviled egg chicks using hard-boiled eggs filled with a creamy egg salad mixture. Each egg chick is adorned with a carrot slice beak, peppercorn or olive eyes, and nestled into a bed of mixed salad greens to resemble grass. Perfect for Easter or any festive occasion, these whimsical appetizers are both visually delightful and deliciously satisfying.

Ingredients

  • 5 hard-boiled eggs

  • 3 tablespoons mayonnaise

  • 3/4 teaspoon Dijon mustard

  • 3/4 teaspoon white vinegar

  • Carrot slices (for beaks)

  • Whole black peppercorns or small pieces of olive (for eyes)

  • Mixed salad greens (for grass)

  • Salt and pepper to taste

Directions

  • Hard Boil the Eggs
  • Place the eggs in a saucepan and cover them with cold water.
  • Bring the water to a boil, then reduce the heat to low and simmer for about 10-12 minutes.
  • Once cooked, transfer the eggs to a bowl of ice water to cool completely before peeling.
  • Make Egg Salad
  • Once the eggs are cooled, carefully peel them and slice them in half lengthwise.
  • Scoop out the yolks and place them in a mixing bowl.
  • Mash the yolks with a fork until they are finely crumbled.
  • Add mayonnaise, Dijon mustard, white vinegar, salt, and pepper to the mashed yolks.
  • Mix everything until well combined, creating a smooth egg salad mixture.
  • Fill the Egg Whites
  • Fill each egg white half with the egg salad mixture, smoothing the tops with a spoon or piping bag.
  • Decorate
  • For the chick’s beak, cut small triangles from the carrot slices.
  • Gently press a carrot slice into the egg salad at the narrow end of each egg to create the beak.
  • For the eyes, you can use small pieces of black peppercorns or black olives.
  • Carefully place the eyes above the beak on each egg.
  • 5. Add Grass
  • Arrange mixed salad greens on a serving platter to resemble grass.
  • Nestle the deviled egg chicks into the “grass” bed.

Tips

  • Perfect Hard-Boiled Eggs: Start with well-cooked hard-boiled eggs. Make sure to cook them until the yolks are fully set but not overcooked, as overcooked yolks can develop a greenish hue around the edges.
