This Rhubarb Fool with Yoghurt combines roasted rhubarb with creamy Greek yogurt, infused with fresh orange juice for a tangy twist. Ingredients

  • 300 g rhubarb, trimmed and chopped into pieces

  • 50 g granulated sugar (adjust according to taste and tartness of rhubarb)

  • 250 g Greek yogurt

  • 50 ml freshly squeezed orange juice (for drizzling over rhubarb)

  • 30 g pistachios, chopped (for garnish)

  • Additional sugar for roasting rhubarb, if desired

Directions

  • Preheat the Oven and Prepare Rhubarb
  • Preheat your oven to 180°C (350°F).
  • Place the chopped rhubarb on a baking sheet lined with parchment paper.
  • Drizzle the freshly squeezed orange juice over the rhubarb pieces.
