Ingredients

  • 200 g Arborio rice (Risotto rice)

  • 225 g shrimp, peeled and deveined

  • A pinch of saffron threads

  • 2 tablespoons olive oil

  • 1 small onion, finely chopped

  • 2 cloves of garlic, minced

  • 120 ml dry white wine

  • 960 ml vegetable or chicken broth

  • 60 g samphire, rinsed and trimmed

  • 1 red bell pepper, diced

  • 1/4 teaspoon chili flakes (adjust to your desired level of spiciness)

  • Zest of 1 lemon

  • Juice of 1/2 lemon

  • 50 g lamb’s lettuce

  • Salt and pepper to taste

  • Chives for garnish

Directions

  • In a small bowl, soak the saffron threads in 2 tablespoons of hot water and set aside.
  • Heat the olive oil in a large, deep pan over medium heat. Add the chopped onion and minced garlic, and sauté until they become translucent.
  • Stir in the Arborio rice and cook for a couple of minutes, allowing the grains to become coated with the oil.
  • Pour in the white wine and cook until most of the liquid has evaporated.
  • Gradually add the vegetable or chicken broth, one ladleful at a time, stirring constantly. Allow the liquid to be absorbed before adding more.
  • After about 15-20 minutes, when the rice is almost cooked but still slightly firm (al dente), stir in the saffron threads along with the soaking water.
  • In a separate pan, heat a little oil and sauté the shrimp until they turn pink and are cooked through. Season with salt and pepper.
  • Add the cooked shrimp, samphire, diced red bell pepper, chili flakes, lemon zest, and lemon juice to the risotto. Stir gently to combine and cook for an additional 2-3 minutes until the samphire is tender.
  • In the same pan used to cook the shrimp, quickly sauté the lamb’s lettuce until wilted. Season with salt and pepper.
  • Taste the risotto and adjust the seasoning with salt and pepper if needed.
  • Serve the saffron shrimp risotto hot, garnish with chives and chili flakes.
