Ingredients

  • 1 bunch of fresh green asparagus

  • 200 g mixed mushrooms (such as button mushrooms, cremini mushrooms, shiitake mushrooms)

  • 2 tablespoons olive oil

  • 2 cloves garlic, minced

  • Salt and pepper to taste

  • Fresh parsley, chopped (for garnish)

  • For the creamy mushroom sauce
  • 200 g mushrooms (any variety you prefer), finely chopped

  • 2 tablespoons butter

  • 2 tablespoons all-purpose flour

  • 1 cup vegetable or chicken broth

  • 1/2 cup heavy cream

  • Salt and pepper to taste

Directions

  • Prepare the Green Asparagus
  • Wash and peel the asparagus spears under cold water and trim off the woody ends.
  • Bring a pot of salted water to a boil. Blanch the asparagus spears for 2-3 minutes until they are bright green and slightly tender. Remove from the boiling water and immediately transfer to a bowl of ice water to stop the cooking process. Drain and set aside.
  • Make the Creamy Mushroom Sauce
  • In a saucepan, melt the butter over medium heat. Add the finely chopped mushrooms and minced garlic. Sauté until the mushrooms are golden brown and the liquid has evaporated.
  • Sprinkle the flour over the mushrooms and stir well to combine. Cook for 1-2 minutes to remove the raw flour taste.
  • Stir in the heavy cream and simmer for an additional 2-3 minutes until the sauce has thickened to your desired consistency. Season with salt and pepper to taste. Keep warm on low heat while you prepare the rest of the dish.
  • Cook the Mixed Mushrooms
  • Heat olive oil in a skillet over medium heat. Add the mixed mushrooms and sauté until they are tender and golden brown, about 5-7 minutes. Season with salt and pepper to taste.

This dish pairs well with crusty bread or a side of roasted potatoes. Enjoy!

Tips

  • When I peel asparagus, I start just below the tip and carefully peel downwards towards the end. This method ensures that I remove any tough outer layers, leaving behind the tender, flavorful stalks perfect for cooking.

    Frequently Asked Questions

    Can you freeze asparagus?

Yes, you can freeze asparagus! To freeze asparagus, first blanch it in boiling water for about 2-3 minutes, then immediately transfer it to an ice water bath to stop the cooking process. Once cooled, pat the asparagus dry with paper towels and arrange them in a single layer on a baking sheet. Place the baking sheet in the freezer until the asparagus is frozen solid, then transfer the asparagus to airtight freezer bags or containers. Frozen asparagus can be stored in the freezer for up to 8-12 months. When ready to use, thaw the asparagus in the refrigerator overnight before cooking.

Can I make any substitutions for the heavy cream in the sauce?

If you prefer a lighter option, you can substitute half-and-half or milk for the heavy cream. However, keep in mind that the sauce may be slightly thinner and less creamy.

How do I know when the asparagus is done cooking?

The asparagus is done cooking when it is bright green and slightly tender but still has a bit of crispness to it. Be careful not to overcook it, as it can become mushy.
