This recipe is a refreshing and nutritious dish that features rice wrappers filled with cooked shrimp, cucumber, carrot, rice noodles, sesame seeds, and fresh coriander. Served with chili sauce for dipping. It provides a balanced combination of flavors and textures, making it a delicious and healthy choice for a light meal or appetizer.

Ingredients

  • 8-10 rice paper wrappers

  • 16-20 cooked medium-sized shrimp, peeled and deveined

  • 1 cucumber, julienned

  • 1 carrot, julienned

  • 1 cup cooked rice noodles

  • 2 tablespoons sesame seeds

  • Fresh coriander leaves

  • Chili sauce, for dipping

Directions

  • Prepare all the ingredients by peeling and deveining the shrimp, julienning the cucumber and carrot, cooking the rice noodles according to package instructions, and washing the coriander leaves.
  • Fill a large shallow bowl with warm water. Dip one rice paper wrapper into the water for a few seconds until it becomes pliable and soft. Place it on a clean, damp kitchen towel or plate.
  • On one edge of the rice paper wrapper, arrange 2 shrimp, a small handful of cucumber and carrot julienne, a few tablespoons of rice noodles, a sprinkle of sesame seeds, and a few coriander leaves.
  • Carefully fold the sides of the rice paper wrapper over the filling, then roll it up tightly from the edge with the filling, similar to a burrito.
  • Repeat the process with the remaining rice paper wrappers and ingredients.
  • Once all the spring rolls are assembled, serve them immediately with chili sauce for dipping.
