Ingredients

  • 4 cups fresh arugula leaves

  • 1 ripe mango, peeled and diced

  • slices of prosciutto, thinly sliced

  • 1/4 cup goat cheese pearls

  • 1/4 cup walnuts, roughly chopped

  • Raspberry balsamic glaze (from La Place or any store-bought raspberry balsamic glaze)

Directions

  • Preheat your grill or grill pan (or normal pan if you do not have it) over medium-high heat.
  • Lightly oil the grill grates or grill pan. Place the diced mango on a skewer or grill basket and grill for 2-3 minutes on each side, or until grill marks appear and the mango is slightly caramelized. Remove from heat and set aside.
  • In a dry skillet, toast the walnuts over medium heat for 2-3 minutes, or until fragrant. Remove from heat and let them cool.
  • Tear or slice the prosciutto slices into smaller pieces.
