This recipe features a refreshing combination of fresh strawberries, mozzarella cheese, and pine nuts. Fresh strawberries provide antioxidants for healthy skin and are rich in vitamin C.   • 250 grams of fresh strawberries, hulled and sliced

  • 225 grams of mozzarella cheese

  • 15 grams of fresh mint leaves, torn or chopped

  • 30 grams of pine nuts

  • Optional: balsamic glaze or balsamic reduction for drizzling


  • In a dry pan over medium heat, toast the pine nuts until they turn golden brown. Keep an eye on them as they can burn quickly. Set aside to cool. 
  • In a large bowl, combine the sliced strawberries, mozzarella cheese and torn mint leaves.
  • Sprinkle the toasted pine nuts over the salad.
