Create a refreshing Watermelon Smoothie Bowl by hollowing out a watermelon half and blending its flesh with a frozen banana, Greek yogurt, and lime juice until smooth. Garnish the smoothie with lime slices, coconut flakes, and extra watermelon cubes for added texture and flavor. Serve immediately for a nutritious and visually appealing breakfast or snack option.

Ingredients

  • 1 small watermelon (used both for the shell and the smoothie)

  • 1 frozen banana

  • 1 cup yogurt or a non-dairy alternative

  • 1 tablespoon lime juice

  • 1/2 cup coconut water or regular water (optional, for desired consistency)

  • Slices of lime, for garnish

  • Coconut flakes, for garnish

  • Extra watermelon cubes, for garnish

Directions

  • Cut the watermelon in half. Scoop out the flesh from one half, creating a bowl. Set the shell aside for later use.
  • Remove the seeds and cut the watermelon flesh into chunks. You’ll use about 2 cups of these chunks for the smoothie. Cut additional watermelon into cubes for garnishing and set them aside. Store any extra chunks in the refrigerator for another use.
  • In a blender, combine 2 cups of watermelon chunks, the frozen banana, Greek yogurt, and lime juice.
  • Blend until smooth. If the mixture is too thick, add coconut water (or regular water) a little at a time until the desired consistency is reached.
  • Pour the smoothie mixture into the prepared watermelon shell.
  • Garnish with slices of lime, coconut flakes, and extra watermelon cubes.
